When Speaking about the dryness of wine, this refers to the tannin level.
When using the term “dry” this refers to the wine's residual sugar level. It has NOTHING to do with tannins. If a wine is highly tannic we refer to it as “tannic” or “astringent”. Tannin is felt (tactile) while dryness is tasting the sweetness level.
