Originating in Greece, this white wine grape with a strange name has incredible value in the wine world because it doesn’t lose acidity in hot climates. Incroyable, as the French would say! Wines from Assyrtiko typically have great structure and complexity and the ability to age. I am seeing this as the answer to our problems with climate change and wines that do not have enough acid. Flabby wines be gone!
